How to make a vegan lifestyle easy and convenient for all

Chef Lexi Monzeglio believes that it is possible for many more people to enjoy a healthier, more sustainable vegan lifestyle. She co-founded Lexi’s Healthy Eatery, a Johannesburg-based restaurant group centered around a plant-based, sustainable menu. Astonishingly, the group has grown from zero to three outlets in just eighteen months, in a perceived niche market, where similar enterprises have struggled to survive. But what keeps her patrons going back for more? Is it the food? Lexi believes that there is a lot more to it, starting with the idea that we can ALL make a difference. But an idea isn’t enough. “You need to bring it down to earth and make it easy for people,” she says. “Change requires many incremental, small steps.”
